Producer: Jose Olavo Boechat

Region: Garça, Brazil

Variety: Yellow Catuaí

Elevation: 900 masl

Process: Natural

Saltwater comes from the Boechat family, whose coffee-growing history in São Paulo State dates back to 1950, when Jacy Boechat began cultivating coffee in Ocauçu (SP).

In the early 1980s, the family expanded to a small property in Nova Colúmbia, near Garça (SP). The farm’s Arabica planting was established from its own nursery, using seeds germinated by Ary Boechat—an approach that reflects long-term stewardship and continuity in the field.

During the 1990s, the family lived on the farm for a decade, strengthening a day-to-day relationship with the land and building the foundation for the work carried forward today.

The current generation, led by José Olavo Boechat, continues the cultivation with a focus on professionalization, consistency, and regional development. Garça Armazéns is one outcome of this ongoing work—connecting producer expertise with broader market possibilities while preserving the farm’s agricultural heritage.

Espresso

Dose: 18 g of ground coffee
Yield: 36 ml
Time: 28 to 32 seconds

How to brew:

  1. Use 18 g of finely ground coffee, espresso grind.
  2. Brew until you reach 36 ml in the cup.
  3. The extraction should take between 28 and 32 seconds — not too fast, not too slow.

4. Adjust the grind if needed:

• Too fast → grind finer
• Too slow → grind coarser

Filter

OREA V4 NARROW

Dose: 20 g of coffee
Water: 340 ml filtered, at ~94°C
Total brew time: 3:30 min

How to brew:

  1. Place the filter in the Orea V4 Narrow and rinse with hot water.
  2. Add 20 g of medium-ground coffee.
  3. Pour 340 ml of water in slow pulses (for example, 3–4 pours), using a circular motion.
  4. Let the water draw down completely between pours.
  5. Aim for a total brew time of around 2 minutes and 30 seconds.

Pro tips:

  • Use a scale and a timer. Consistency makes the difference.
  • Grind fresh if possible. Freshness changes everything.
  • Feel free to tweak the recipe to match your taste — sweeter, stronger, lighter.
